Taking place for the first time as an integral part of oils+fats is the 8th International Symposium on Deep Frying, organized by Euro Fed Lipid (EFL). The symposium focuses on aspects that will promote a better understanding and optimization of the deep-fat frying process, in order to strengthen the market for fried products in the future.

The speakers come from all over the world. They include: Richard F. Stier, Sonoma, USA; Bertrand Matthäus, Max Rubner Institute, Detmold, Germany; Gloria Marquez-Ruiz, Spanish National Research Council, Spain; Felix Aladedunye, University of Lethbridge, Canada; Pramod Francis, Prasan Solutions, Cochin, India ;Neil McLeod, Filtercorp, Shawell, UK; and Pierre Gonde, French Food Industry Association, Villeneuve, France.
