Caramelized Onion and Bleu Cheese Crostini

Prep time 5 minutes
Cook time 30 minutes

Ingredients:

2 Tbs extra virgin olive oil
1 Whole large sweet onion, sliced or diced
1 dash of salt
1 teaspoon fresh thyme leaves
1 whole baguette, sliced and toasted
½ cups Blue cheese crumbles

Directions:

In a large sauté pan, heat the olive oil on medium-low heat.
Add the onions and sprinkle with a dash of salt. Cook, stirring often, for about 5 minutes or until they have softened and then add the thyme leaves.
Cook the onions, stirring often for 20-25 minutes or until they have turned brown.
Remove from heat.
