Our production process begins in the groves of the Kolymvari mountains where our signature Koroneiki olives are harvested via hand-shakers and placed into burlap sacks. Within 10 hours after being harvested the olives are transported to our mill. We utilize the traditional methods of production to create that unique flavor every bottle of Creta Grove EVOO carries. This method entails first washing the olives to ensure no dirt is mixed into the final product. Next, the clean olives are ground into an olive paste using large millstones. The paste is then spread onto large fiber disks and then is passed into the press where the oil and water from vegetation are separated by decantation.
