The EVOlution cocktail was created by bartender Darren Crawford at Krescendo and includes egg and olive oil. Chios Remedy, at Molyvos (871 Seventh Ave., at W. 56th St., molyvos.com) Kamal Kouiri, the wine director for Molyvos, an upscale Greek restaurant in Midtown, got the idea for this cocktail while traveling in Greece. He said Chios is known as one of the healthiest islands in the area, with a diet heavy in olive oil and lemons. He incorporates rosemary-infused olive oil and lemon juice into the Chios Remedy ($12), along with Mastiha, a spirit made from pine sap grown on Chios; Cointreau, an orange-flavored liqueur; and egg white for texture. The result is a light, herbal refreshing drink.
