20131110-121714.jpg Kamal Kouiri makes the Chios Remedy at Molyvos on Seventh Ave. in Manhattan. The Butterfly, chef Michael White’s collaboration with Eben Freeman, serves creative cocktails and Wisconsin-inspired comfort food. Freeman came up with a twist on the pickleback, a shot that’s traditionally whisky followed by a pickle brine chaser. He calls it the Trickle Back ($6), because it’s got a small touch of olive oil, which he says makes it “go down slower.” He mixes the house-made Fresno chili brine used in the restaurant’s coleslaw with chilled Bombay Sapphire gin. The gin floats to the top, creating the shot and chaser in one glass. On top, he adds a few drops of olive oil, and then carefully adds some shaved Parmesan cheese, which combines with the olive oil, rather than sinking to the bottom. The drink goes down in one gulp and is a rush of flavors, from the salty and savory oil and cheese, to the herbal gin, followed by the spicy brine.
