  • Olive Oil Economy: the secrets of the quality of Greek olive oil

    The beneficial properties of olive oil have been widely popularized for years. However, many of us wonder what makes olive oil so special. Its taste is more elegant than that of sunflower oil but what useful substances make olive oil valuable and useful for health is still a mystery for the average consumer

    Vassilis Fradzolas is the guru of olive oil in Athens. He graduated in Food Policy at London School of Economics, he is known as an international taster and advisor to olive oil producing companies. He hosts private workshops related to the production of olive oil and reveals to new entrepreneurs the secrets of the production process and the quality of Greek olive oil.     Spain ranks first as regards olive oil production in the world with an average production of 1.2 million tons per year. 2012 proved to be extremely successful for the production of olive oil in the country as it surpassed 1.6 million tons. Experts stress that although Spanish olive oil is the most widely distributed, its quality is not the highest. The second largest producer in the industry is Italy. Its exports are higher than its local production due to which it imports a certain amount of olive oil from third countries.

    Greece is the third largest producer of olive oil with 350 thousand tons of production. Of these, the country bottles, brands and sells about 230-250 thousand tons, and exports the remaining amount in bulk, mainly to Italy. Since the domestic industry cannot use the entire amount of olive oil produced and since it cannot be stored for more than 18 months, exports to larger producers are necessary.

    Olive oil quality is divided into several categories. The highest is the quality of extra virgin olive oil, whose acidity is lower than 0.8%. If the acidity is between 0.8% and 2%, olive oil is defined as virgin. Olive oil with an acidity of more than 2% is classified as industrial.
    The temperature in the processing of extra virgin olive oil should not exceed 28°C in order for it to retain all the important substances. Olive oil is rich in polyphenols, which are antioxidants. They protect the cell membranes and the DNA, preventing certain mutations that cause cancer. The main positive aspect of polyphenols is their impact on free radicals as they limit the harmful effects of oxidative stress.
    If the temperature during the heat treatment of olive oil exceeds 28°C, polyphenols are more easily dissolved in the water involved in the process and are expelled with waste waters. Many producers use, during the processing process, a temperature of up to 60°C to accelerate production at the expense of quality. If olive oil is left in the mill for half an hour or longer at a temperature of between 40-60°C, a greater amount of polyphenols will be destroyed.
    Some of the biggest enemies of olive oil are sunlight and oxidation. It must be stored in proper packaging to retain its taste qualities and avoid going rancid.

    A problem noted by experts is the expiry date as it is related to the date of bottling of olive oil instead of to the date of its production. This means that it is better to buy olive oil with as long a shelf life as possible to be sure that the product is good.
    Half-ripe olives are the best raw material which producers can choose to make excellent olive oil that is good for the health. It is recommended that the olives are half-ripe, half-purple and hard before putting them in the press. The greatest amount of polyphenols, which are good for not only health, but also play an important role in the durability of olive oil, is concentrated beneath the skin of half-ripe olives.

    If the low temperature requirement is met in the processing of half-ripe olives, the result will be olive oil that has an excellent taste and is rich in polyphenols. The higher content of polyphenols makes olive oil resistant to light, heat and oxidation. Good quality olive oil contains 200-250 mg/kg whereas excellent quality olive oil contains 250-350 mg/kg of polyphenols.
    In Greece, there are several varieties of high quality olives. Koroneiki, a variety of olives from the area of Koroni in Laconia (Peloponnese), is the most common variety in the country and it offers consumers good quality, followed by the olives from Chalkidiki, Amfissa (central Greece), Maroneia (Eastern Thrace). The varieties of Lesvos, Athinon and Attiki are popular too.
    At international tastings, experts from around the world assess the quality of olive oil on the basis of three main indicators. They are bitterness, fruitiness and spiciness. Each of these properties is measured on a scale of 1 to 10, and the olive oil is served in blue glasses in order for the colour or clarity of the product to not affect the assessment of the evaluator.

    One of the biggest problems in the production of olive oil in Greece is associated with the processing units. Payment in kind is still used in the production of olive oil. This means that the production units are not paid for the work – they receive a percentage of the quantity of production. For this reason, many producers increase the temperature during the production process in order to increase the amount thus worsening the quality of the product.

    “You can have high quality olives but the processing plant may destroy the quality of olive oil made from them,” Vassilis Fradzolas told To Vima. He stresses that the Italian competitors of Greece have much better developed production units which ensure the high quality of the end product.
    Olives are stored in plastic boxes rather than in sacks as is still the practice in Greece and the modern plants process them no later than 24 hours after they have been delivered to the warehouse in order to extract from them oil of the highest quality. Half-ripe and ripe olives are divided during the production process in order for the producer not to mix up the quality. To avoid pre-oxidization of olive oil, a lid cooled by liquid nitrogen is used for the cooling of the process in the mill.

    Peroxides are primary oxidizing compounds, which are formed due to the presence of oxygen during the processing and storage of olive oil. In the second step of oxidation, peroxides are decomposed into different end products of oxidation. In extra virgin olive oil, the maximum peroxide content must not exceed 20 milligrams of oxygen per kilogram of olive oil. Another indicator of quality is Κ232, which should not be higher than 2.5 and K270> 0.22.

    According to Fradzolas, good quality olive oil has the following parameters: acidity < 0.3, peroxide amount < 8; polyphenols > 200 mg/kg. Based on the scale of tasters which ranges from 1 to 10, fruit flavour should be 3 and 5, spiciness – from 2 to 6 and bitterness must be less than 2.
    Industrial olive oil is obtained when production problems or poor quality of the raw material do not allow the production of virgin or extra virgin olive oil. Then, the producers subject this olive oil to industrial processing at 220°C which reduces the acidity of the product chemically. Then, they mix it with 10% -15% extra virgin (cold pressed) olive oil to launch the end product on the market. The packaging contains the contents of the high quality olive oil first and then subsequently it indicates the contents of the industrially processed oils.

    According to experts, it is a myth that using vegetable or sunflower oil for frying is healthier than using olive oil. This is not true and is the result of a marketing policy developed by other countries that do not have their own olive oil production.
    Consumers should be careful and avoid buying olive oil which comes on the shelf in a transparent bottle. Light and heat catalyze more rapid oxidation of olive oil and it quickly loses its taste qualities. In order to produce high quality olive oil, olives should be picked between 20 and 25 October at the latest and processed no later than the middle of December. In Italy, olive picking traditionally starts on 1 October.

    Tests show that the longer the olives remain before processing, the more olive oil loses its healthy properties. Four years ago, for example, samples taken on 22 October showed that the content of polyphenols in olive oil was 440 mg/kg. The samples taken 40 days later, on 3 December, from olives that had remained in the warehouse for a long time, showed that the percentage of polyphenols in olive oil had decreased to 209 mg/kg.

  • Olive oil can protect brain from Alzheimer

    It might seem against all logic, but adding a little olive oil or a handful of nuts to your diet each day may help keep your mind clear, researchers reported on Monday. It’s the same diet that’s also been shown to reduce deaths from heart attacks and strokes.

    The researchers found that people who ate these healthy fats were less likely to show the early signs of dementia than those who stuck to a more traditional diet. And this was done in Spain — where people are already eating a so-called Mediterranean diet.

    “Our findings support increasing evidence on the protective effects of the Mediterranean Diet on cognitive function,”Miguel Martinez-Gonzalez of the University of Navarra in Spain and colleagues reported in the Journal of Neurology, Neurosurgery and Psychiatry.

    The findings come from a large and well-publicized trial that showed the Mediterranean diet rich in fruits, vegetables, olive oil and a little wine can cut the risk of heart attacks and strokes by 30 percent. Martinez and colleagues took a part data on 500 volunteers from their own study center, who were followed for more than six and a half years after starting the diet.

    A Mediterranean diet includes lots of salad, fruit, vegetables, nuts, a little fish, a little lean meat, a small amount of cheese and olive oil. Wine is also served at meals. In the main study, 7,400 volunteers got extra counseling, and either a weekly supply of extra-virgin olive oil or mixed nuts — walnuts, almonds and hazelnuts.

    The volunteers, aged 55 to 80, were all at high risk of heart disease because of diabetes, a family history of the disease, high blood pressure, unhealthy cholesterol levels — or they were overweight or smokers. They were randomly assigned to either add more extra-virgin olive oil to their daily diets, a daily handful of the mixed nuts, or just a standard diet with advice to cut fat.

    Such “randomized” studies are considered more powerful, because people don’t choose which diet to adopt — and so other outside factors don’t interfere with the results. For instance, people who choose to eat nuts might also dislike meat, or they might like sweets, or they might exercise more or less than people who don’t think much about eating nuts.

    Six years after starting on the diet, the 500 Navarra volunteers took two standardized tests for dementia and the confused thinking, called cognitive impairment, that often leads to dementia.

    The researchers found that 60 volunteers had developed mild cognitive impairment. Eighteen had been told to eat more olive oil, 19 had been on the diet with added mixed nuts and 23 of them had been advised to eat a low-fat diet. And 35 people developed dementia: 12 on the added olive oil diet; six who got nuts and 17 on the low-fat diet.

    There are several ways that adding olive oil or nuts to the diet might protect the brain, the researchers said. Olive oil and nuts contain monounsaturated fats, which are better for artery health than the saturated fats found in butter, meat and lard. These foods are also high in fiber and vitamin E, as well as minerals. Walnuts are rich in omega-3 fatty acids.

    The diet could reduce damaging inflammation, Martinez says. And some studies have suggested that virgin olive oil — which is cold-pressed and unrefined — might fight the beta amyloid “plaques” found clogging the brains of Alzheimer’s patients. “A third mechanism may be that an improvement in vascular health leads to better brain blood flow,” Martinez said by e-mail.

    These nutrients protect against the oxidative damage that can cause heart disease, cancer and Alzheimer’s. Various studies have shown little benefit from taking vitamins alone, but this study shows the combination of the factors in a healthful diet does seem to have an effect.

    Groups like the Alzheimer’s Association have been warning that the U.S. will have to cope with a tsunami of Alzheimer’s disease as the population ages, with projections that the number of patients with this untreatable form of dementia will triple in the next 40 years, to 13.8 million in 2050.

    “Currently, there is no effective therapy to delay the onset or halt the progression of dementia,” the researchers noted.
